What the problem is the lack of a manual save and the respawn. When you die, and you die often, you can only respawn and then you need to kill the 20 enemies you just killed again. If you want to reload a save, you have to respawn, quit to title screen and then load the save.
The main purposeful way to respawn enemies is to go find a Meditation Spot and Rest. Doing this will recover your health, Force, and health stims, but it will also cause all the enemies to respawn.
